Speedy Chicken Soup

 

You’ll need:

— 1 rotisserie chicken (shredded, skin discarded)

— 1 liter clean chicken broth (no additives)

— 2 shallots (finely chopped)

— 1 thumb-sized piece of ginger (minced)

— 2 carrots (sliced)

— 1 can chickpeas (rinsed and drained)

— Fresh herbs (like parsley or dill)

— 1 lemon (zested and juiced)

— Freshly grated Parmesan

— Olive oil

— Salt & pepper (or any additional seasoning)

Method:

— Heat the chicken broth in a large pot over medium heat and bring it to a gentle simmer.

— Meanwhile, sauté the shallots, ginger, carrots, and chickpeas in a separate pan with olive oil for about 5-7 minutes, until softened and aromatic.

— Once the vegetables are ready, add them to the simmering broth with the chicken and let everything cook together for about 2-3 minutes.

— Finish with fresh lemon juice, herbs, and season with salt & pepper to taste. Top with freshly grated Parmesan before serving.
