Honey Miso Salmon with Roasted Veggies

 

You’ll need:

— 200g green beans

— 200g champignons, sliced

— 1 white onion, cut into wedges

— 1 red bell pepper, sliced

— 1 yellow bell pepper, sliced

— 2 salmon fillets

— 2 tbsp tahini

— 1 tbsp honey

— 1 tsp miso paste

— 1 tbsp tamari sauce

— 1 tsp sesame oil

— 2-3 tbsp water

— Salt & pepper (or any additional seasoning)

Method:

— Preheat oven to 200°C (400°F).

— Toss green beans, champignons, onion, and peppers with a marinade made from tahini, honey, miso, tamari, sesame oil, and water.

— Spread the marinated veggies on a lined sheet pan. Coat the salmon fillets with a mixture of miso paste and honey, then place them on the pan with the veggies.

— Bake for 20 minutes until the salmon is cooked through and the veggies are tender.

— Finish with a squeeze of lemon juice before serving.
