Lazy Shakshuka

 

You’ll need:

— 2 organic eggs

— 1 jar of marinara sauce (no added sugar or vegetable oils)

— 1 courgette, sliced

— Olive oil

— Feta (optional)

— Fresh parsley (optional)

— Sea salt

Method:

— Preheat the pan to medium heat.

— Sauté sliced courgette in olive oil for 5 mins until soft and slightly browned.

— Add marinara sauce and a bit of water if needed. Stir and simmer.

— Make 2 small wells in the sauce, and crack eggs into them.

— Cover, and cook on medium-high for 8-10 mins until eggs are done.

— Season with sea salt, add feta and parsley if desired.
