Crispy Gnocchi Caprese Salad

 

You’ll need (Serves 2):

Salad:

- 500g gnocchi, cooked for 3 minutes, smashed, and baked until crispy (25 mins at 200°C)

- 150g shredded chicken

- 150g cherry tomatoes, halved

- 200g oyster mushrooms, sautéed until golden

- 1 medium courgette, sliced and fried in olive oil

- Fresh basil

- 2 tbsp slivered Parmesan

Dressing:

- 10 ml extra virgin olive oil

- Juice of 1 lemon

- 1 tsp Dijon mustard

- 1 tsp honey

- 2 tbsp apple cider vinegar

- Sea salt and pepper
