Chimichurri Chicken - Cauliflower Rice - Green Tahini Courgette Dip

You’ll need:
- 2 chicken breasts
- 1 cup parsley, chopped
- 2 garlic cloves, minced
- 1 tbsp red wine vinegar
- 2 tablespoons of olive oil
- 1/2 cauliflower
- 1/2 medium zucchini
- 2 tbsp tahini
- Pomegranate seeds & kale sprouts for topping
Instructions:
- Marinate chicken in parsley, garlic, olive oil (ideally overnight).
- Pan-fry chicken (5-6 mins per side).
- Blend cauliflower into rice & sauté (5 min).
- Blend zucchini, tahini, garlic, honey & lemon for the dip.
- Plate with dip, cauliflower rice, chicken, & toppings.
