Crispy Rice Poke Bowl with Salmon and Spicy Mayo

 

You’ll need:

- Salmon fillet (air-fried for 15-20 minutes at 170°C, seasoned with salt & pepper)

- Cucumber, roughly sliced

- Mango, diced

- Radish, thinly sliced

Miso Crispy Rice:

- 1 cup cooked rice

- 1 tbsp miso paste

- 1 tsp honey

Bake in oven (180 degrees C) for 20 mins

- Peanuts, crushed for topping

- Green onion, chopped for garnish

Spicy Mayo Dressing:

- 2 tbsp mayo (I prefer an avocado-based one)

- 1 tbsp sriracha (adjust based on your spice level)

- 2 tsp water to thin

- 1 tsp lemon
