Green Goddess Protein Wraps

 

You’ll need:

— 2 large lettuce leaves (butter lettuce or romaine)

— 1 cup cooked, shredded chicken

— 2 radishes, thinly sliced

— A handful of chicory, chopped

— A small handful of fresh parsley and basil, roughly chopped

— ½ cup Greek yogurt

— 1 tbsp tahini

— Juice of ½ lemon

— Salt & pepper

Method:

— Preheat a pan to medium heat.

— Lay out the lettuce leaves and fill with shredded chicken, radish slices, chicory, and fresh herbs.

— In a bowl, mix Greek yogurt, tahini, lemon juice, chopped basil and parsley, salt, and pepper to make the green goddess dressing. Drizzle over the chicken and veggies.

— Fold the lettuce wraps gently and place them in the pan. Fry for 2-3 minutes on each side until golden and slightly crispy.

— Remove from the pan and serve as is, or pair with a feta & cottage cheese dip on the side for extra flavor.
