Vietnamese-Inspired Veggie Omelette with Peanut Soy Dip

 

You’ll need:

- 1 small courgette, shredded

- 1 small carrot, shredded

- 1/2 red onion, thinly sliced

- 50g red cabbage, shredded

- 2 eggs, beaten

- 1 teaspoon olive oil

- Salt & pepper

For the Dip:

- 1 tablespoon peanut butter

- 1 tablespoon soy sauce

- Juice of 1/2 lime

- 1 teaspoon honey

- 1 teaspoon water (to thin, if needed)

Method:

— Heat olive oil in a pan over medium heat.

— Add the shredded courgette, carrot, onion, and red cabbage, cooking until softened.

— Pour beaten eggs over the veggies, season with salt and pepper, and cook like an omelette.

— For the dip, mix peanut butter, soy sauce, lime juice, honey, and water until smooth.
