Crunchy Tortilla Fattoush Salad

 

You’ll need:

— 1 whole grain tortilla

— 50g sheep’s milk feta, crumbled

— 1 handful fresh mint, chopped

— 1 handful fresh basil, chopped

— 1 small cucumber, diced

— 1 large heirloom tomato, diced

— 1/2 red onion, thinly sliced

— 100g shredded rotisserie chicken

— Salt & pepper (or sea salt & freshly ground black pepper)

Method:

— Preheat your air fryer to 180°C (350°F).

— Cut the whole grain tortilla into strips or triangles, and air fry them for about 5-7 minutes until crispy and golden. Let them cool while you prepare the salad.

— In a large bowl, combine the crumbled feta, chopped mint, basil, diced cucumber, tomato, red onion, and shredded chicken.

— Drizzle with raw apple cider vinegar and extra virgin olive oil. Season with sea salt and freshly ground black pepper, then toss everything together gently.

— Top the salad with the crispy tortilla pieces just before serving for that perfect crunch.
