Flatbread with Truffle Pesto, Grilled Courgette, Parmesan + Rocket

 

Ingredients:

- 1 store-bought flatbread

- 2 tablespoons truffle pesto

- 1 small courgette, grilled

- 30g parmesan, shaved

- 50g rocket

- 1 teaspoon olive oil

- Salt & pepper

Instructions:

— Preheat the grill or grill pan to medium-high.

— Grill courgette slices until tender and lightly charred, about 6-7 minutes on each side.

— Spread truffle pesto on the flatbread, add grilled courgette slices, parmesan shavings, and rocket.
