Crunchy Miso Rice Bowl with Crispy Tofu & Spicy Tahini Dressing

 

You’ll need:

- Leftover rice mixed with 1 tbsp miso & honey (air fried for 20 mins)

- White cabbage, carrots, cucumber, spring onions (finely sliced)

- Tofu (marinated in 1 egg, baked until crispy (approx. 15-20 mins))

Spicy Tahini Dressing:

- 1 tbsp tahini

- Hot sauce

- Juice of 1 lemon

- ½ tbsp apple cider vinegar

- Salt to taste

Top with mint, sesame seeds & pomegranate seeds for extra freshness!
