Crispy Gnocchi Salad with a Zesty Herb Dressing
You’ll need:
- 1/4 white cabbage, thinly sliced
- 1 courgette, sliced
- 2 carrots, thinly sliced
- Olive oil for pan frying
- Fresh parsley & basil
- Pomegranate seeds
For the Dressing:
- 2 tbsp tahini
- Juice of 1 lemon
- 1 tsp honey
- Water to thin
- Salt & pepper to taste
Method:
1. Heat olive oil in a pan over medium heat. Add white cabbage, courgette, and carrots. Pan-fry until golden and tender.
2. While the veggies cook, mix the tahini, lemon juice, honey, and water until you have a smooth, pourable consistency. Season with salt and pepper.
3. Once the veggies are ready, drizzle with the zesty tahini dressing, and top with fresh parsley, basil, and pomegranate seeds.
4. Serve as a side or enjoy as a light, main dish!
