Tuna Snack Platter with Crunchy Veg + Tortilla Bites

 

You’ll need:

— 1 carrot (cubed)

— 1 cucumber (sliced)

— Capers (chopped)

— 1 can of tuna (drained)

— Fresh parsley (for the salad)

— 2-3 cherry tomatoes (finely chopped)

— 2-3 corn tortillas

— Salt & pepper (or any additional seasoning)

Method:

— Preheat your air fryer to 180°C (350°F).

— Throw the corn tortillas in the air fryer for about 5-6 minutes until they’re perfectly crispy.

— While the tortillas are frying, cube the carrot, slice the cucumber, and chop the cherry tomatoes.

— Arrange the veggies on a plate, sprinkle with fresh parsley and chopped capers for extra flavor.

— Drain the tuna and place it next to the veggies.

— Whisk together 1 tbsp apple cider vinegar, 1 tbsp olive oil, 1 tbsp honey, juice of 1/2 a lemon, and another drizzle of olive oil. Season with salt & pepper, then drizzle over the salad and tuna.

— Once the tortillas are done, serve them alongside your platter …&
