Crunchy Quinoa Tuna Power Bowl

 

You’ll need:

- romaine lettuce (roughly chopped)

- 1/2 cucumber (chunky pieces)

- 1/2 beetroot (cooked, sliced)

- 1 can of tuna (drained)

- 30g feta (crumbled)

- 30g crunchy quinoa (air fried for 15 mins)

- fresh parsley (finely chopped)

Dressing:

- juice of 1/2 lemon

- 1 tbsp brown sugar

- 2 tbsp apple cider vinegar

- 1 tbsp olive oil

- 1 tbsp Dijon mustard

- salt & pepper

Cut up your veggies, plate your salad, mix …&
