Cod & Rice Bake with Veggie Stock, Tomatoes, Onions, Broccoli & Feta

 

You’ll need (for 2 portions):

- 2 cod fillets (150g each)

- 100g brown or basmati rice

- 400ml vegetable stock

- 100g cherry tomatoes, halved

- 1 small red onion, sliced

- 100g broccoli florets

- 50g fresh spinach

- 2 garlic cloves, minced

- Juice of 1/2 lemon

- 50g feta cheese, crumbled

- 1 tbsp olive oil

- 1 tsp smoked paprika

- Salt & pepper to taste

Method:

1. Preheat the oven to 200°C (390°F).

2. Assemble the dish: In a baking dish, spread the rice and pour over the vegetable stock. Top with the garlic, smoked paprika, tomatoes, onion, and broccoli. Drizzle with olive oil and half the lemon juice. Season with salt and pepper.

3. Add cod & spinach: Place the cod fillets on top of the rice and scatter the spinach around. Drizzle with the remaining lemon juice and sprinkle with feta.

4. Bake for 20 minutes, or until the cod is cooked through and the rice has absorbed the stock.
