Sweet Fig and Basil Chicken Salad

 

You’ll need:

- 150g rotisserie chicken (shredded)

- A bed of fresh rocket (about a handful or two)

- 2 ripe figs (quartered)

- 4 cherry tomatoes (halved)

- Thinly sliced red onion (just a few rings, to taste)

- Fresh basil leaves (a few for garnish)

For the dressing:

- 1 tsp grainy mustard

- 1 tbsp apple cider vinegar

- 1 tbsp extra virgin olive oil

- Juice of half a lemon

- A dash of honey (about ½ tsp)

- A pinch of salt

Method:

1. Lay the bed of rocket on a plate or shallow bowl.

2. Scatter the shredded rotisserie chicken evenly on top.

3. Add the fig quarters, cherry tomato halves, and thinly sliced red onion.

4. Tear a few fresh basil leaves and sprinkle over the salad.

5. In a small bowl, whisk together the mustard, apple cider vinegar, olive oil, lemon juice, honey, and salt until well combined.

6. Drizzle the dressing over the salad, toss gently, and enjoy!

Optional:

Add a portion of rice on the side or mix it in for some extra carbs if you're looking for a heartier meal.
