Spicy Beef + Rice Noodle Bowl

 

You’ll need:

— 200g lean ground beef

— 1 tbsp coconut oil

— 1 small courgette (zucchini), sliced

— 1 fresh chilli, finely chopped

— Salt & pepper, to taste

— 1 handful fresh spinach (base)

— 1 small carrot, slivered

— 1 small cucumber, slivered

— 1/8 red cabbage, finely shredded

— 1 serving rice noodles, cooked according to package instructions

— Fresh mint leaves & lime (for garnish)

For the Honey-Ginger Dressing:

— 1 tbsp sesame oil

— 1 tsp freshly grated ginger

— 1 tbsp honey

— Juice of 1 lime

— Chilli flakes & salt, to taste

Method:

— Preheat a pan over medium heat and add the coconut oil.

— Once hot, add the sliced courgette and chopped chilli, seasoning with salt and pepper. Sauté for 2-3 minutes.

— Add the beef to the pan and cook until browned and tender, about 5-7 minutes.

— While the beef is cooking, prepare the dressing by whisking together sesame oil, grated ginger, honey, lime juice, chilli flakes, and a pinch of salt. Set aside.

— Prepare the slaw by arranging the spinach in the base of a bowl and adding slivered carrot, cucumber, and shredded red cabbage on top.

— Once the noodles are cooked, place them in the bowl along with the sautéed beef and courgette.

— Drizzle the honey-ginger dressing over the entire bowl and top with fresh mint leaves and lime.
