Baked Feta + Tomato Eggs with Spinach

 

You’ll need:

— 50g baby spinach

— 6-8 cherry tomatoes, halved

— 1 spring onion, chopped

— 2 large eggs

— 30g feta cheese, crumbled

— 1 tsp olive oil

— Salt and pepper to taste

— 1 slice of sourdough bread (toasted)

Method:

1. Preheat your oven to 180°C (350°F).

2. Add spinach, cherry tomatoes, and spring onion to an oven-safe dish.

3. Crack 2 eggs on top, keeping the yolks whole.

4. Crumble feta over everything, drizzle with olive oil, and season with salt and pepper.

5. Bake for 12-15 minutes, until the egg whites are set but the yolks are still runny.
