Greek-Inspired Tacos

 

You’ll need:

— 2 small corn tortillas

— 6 lean beef meatballs (see below for recipe)

— 50g Greek yogurt

— 50g kefir

— ½ cucumber, thinly sliced

— 50g red cabbage, thinly sliced

— 10g crumbled feta (5g per taco)

— Parsley and spring onion (for garnish)

— Salt, pepper, granulated garlic, and a squeeze of lemon

For the meatballs:

— 400g lean ground beef

— 1 egg

— ½ white onion, finely minced

— 1 tbsp corn flour

— Chili flakes, salt, pepper, granulated garlic (to taste)

Method:

— Preheat the oven to 170°C (340°F).

— Make the meatballs: In a bowl, combine the ground beef, egg, onion, corn flour, chili flakes, salt, pepper, and granulated garlic. Gently mix and form 20 small meatballs. Arrange them on a baking sheet and bake for 12 minutes until cooked through.

— Prepare the yogurt-kefir sauce: Mix the yogurt, kefir, and cucumber in a small bowl. Season with salt, pepper, and granulated garlic.

— Massage the red cabbage: Toss the cabbage with a squeeze of lemon juice and a pinch of salt. Massage until slightly softened.

— Heat the tortillas: Warm the corn tortillas in a dry pan over medium heat until warm and crunchy.

— Assemble the tacos: Spread the yogurt-kefir sauce onto each tortilla. Add 3 meatballs per taco, then top with red cabbage, crumbled feta, and garnish with parsley and spring onion.
