Bircher Muesli

 

You’ll need:

— 100 g oats

— 2 tbsp chia seeds

— 1 handful crushed walnuts (~30 g)

— 1 medium apple, grated

— 1 medium carrot, grated

— 1 Medjool date, finely chopped

— 200 g kefir

— 100 g cottage cheese

— ~200 mL water (adjust for desired consistency)

— ½ tsp cinnamon

— Pinch of salt

Optional toppings: Honey, fresh fruit, or a dollop of Greek yogurt✨

Method:

— Prep your ingredients: Grate the apple and carrot, and finely chop the Medjool date.

— Mix the base: In a large mixing bowl, combine the oats, chia seeds, crushed walnuts, cinnamon, and a pinch of salt.

— Add carrots, date & apple.

— Add the liquids: Stir in the kefir, cottage cheese, and water. Mix well until everything is evenly distributed.

— Refrigerate overnight: Cover the bowl and let the muesli sit in the fridge overnight (at least 6–8 hours) so the oats and chia seeds absorb the liquid.

— The next morning, give the muesli a quick stir. Serve as is or top with honey, fresh berries, nut butter & honey…
