Chicken + Rice Lunch Bowl with Tahini Dressing

 

You’ll need:

— 100g Greek yogurt-marinated chicken, sliced (see instructions below)

— 50g cooked rice

— 1 cup romaine lettuce, chopped

— 1/2 bell pepper, sliced

— 1/2 cup roasted broccoli

— 1 tbsp tahini

— 1 tbsp apple cider vinegar

— 1 tbsp honey

— 1 tbsp water

— Juice of 1/2 lemon

— Salt, to taste

Method:

— Preheat oven to 180°C (350°F).

— For the chicken: In a bowl, mix 200g chicken breast with 100g Greek yogurt, 1 tsp paprika, 1/2 tsp garlic powder, and salt. Place in a loaf tin, cover with foil, and bake for 35 minutes, removing foil for the last 10 minutes. Slice and set aside 100g for the bowl.

— Assemble the bowl by layering romaine lettuce, rice, bell pepper, roasted broccoli, and sliced chicken.

— For the dressing: In a small bowl, whisk together tahini, apple cider vinegar, honey, water, lemon juice, and salt until smooth.

— Drizzle the tahini dressing over the bowl. Add salt and pepper to taste.
