Chicken Curry Date Dip

 

You’ll need:

— 100g Greek yogurt

— 1 cooked chicken breast (or rotisserie chicken)

— 1 celery stalk

— 1 medjool date

— 1/2 spring onion

— Juice of 1/2 lemon

— 1 tsp curry powder

— 1/4 tsp turmeric

— Salt & pepper (to taste)

Method:

— Chop the cooked chicken breast into small, bite-sized pieces.

— Finely dice the celery, medjool date, and spring onion.

— Mix the Greek yogurt, curry powder, turmeric, lemon juice, salt, and pepper until smooth in a medium bowl.

— Add the chicken, celery, date, and spring onion to the yogurt mixture, stirring until all ingredients are well-coated.

— Taste and adjust seasoning if needed.

Perfect to spread on toast, in a wrap, or alongside crunchy veggies!
