Crispy Salmon Tostada

 

You’ll need:

— 3 corn tortillas

— 150g salmon fillet

— ½ tsp smoked paprika

— ½ tsp garlic powder

— Juice of 1½ limes (half for salmon, one for sauce)

— 1 small avocado (less than 70g)

— 100g high-protein skyr yogurt

— ¼ green onion, roughly chopped

— 3 cherry tomatoes

— Pickled cabbage (for topping)

— Fresh coriander (optional, for garnish)

— Salt, to taste

Method:

— Preheat oven to 180°C (350°F) and air fryer to 200°C (390°F).

— Place the tortillas in the oven for 10 minutes until crispy.

— Season salmon with smoked paprika, garlic powder, lime juice, and a pinch of salt. Air fry for 10-12 minutes until cooked through and flaky.

— In a blender, combine avocado, skyr yogurt, green onion, cherry tomatoes, garlic powder, remaining lime juice, and salt. Blend until smooth.

— Spread a layer of avocado sauce on each tortilla, top with flaked salmon and pickled cabbage, and garnish with coriander.
