The OG Quinoa Salad

 

You’ll need:

— 1 cup quinoa (rinsed or pre-cooked)

— 1 chicken breast, boiled and shredded

— 2 tbsp peanuts, roughly chopped

— 2 spring onions, finely sliced

— 2 handfuls fresh spinach, chopped

— ½ cucumber, diced

— A small handful of sprouts (alfalfa or radish)

For the dressing:

— 1 tbsp cold-pressed sesame oil

— Juice of 1 lemon or lime

— 1 tsp honey

— Salt, to taste

— A pinch of chili flakes (optional)

— 1 tbsp tamari or soy sauce (optional)

Method:

1. Cook the quinoa if needed, and shred the chicken.

2. Chop the spinach, cucumber, spring onions, and sprouts.

3. Mix up your sesame-lemon dressing—combine sesame oil, lemon juice, honey, salt, and chili flakes.

4. Toss the quinoa, chicken, veggies, and peanuts together. Drizzle with the dressing, mix well, and enjoy.

Tip: Add extra peanuts or a squeeze of lime for more crunch and freshness.
