Gut-Loving Quesadillas

 

You’ll need:

— 4 small corn tortillas

— 30g cheddar cheese (15g per quesadilla)

— 6 slices of lean deli turkey

— Romaine lettuce (a few leaves, chopped)

— Cherry tomatoes (a handful, halved)

— Kimchi (a spoonful or two)

— Pickled cabbage (a spoonful or two)

— Salt & pepper (optional)

Method:

— Preheat a non-stick pan over medium heat.

— Place 2 tortillas on a plate and sprinkle each with 15g cheddar. Add 3 slices of turkey on top of each.

— Top with the remaining 2 tortillas to form quesadillas.

— Fry the quesadillas in the pan for 2-3 minutes per side until golden brown and the cheese is melted.

— Remove from the pan, let them cool slightly, and then stuff with romaine lettuce, cherry tomatoes, kimchi, and pickled cabbage.

— Slice them in half and add a sprinkle of salt & pepper if desired.
