Red Pesto Roasted Veggie Salad with Feta + Rocket

 

You’ll need:

— 1 sweet potato, cut into chunks

— 1 courgette, cut into chunks

— 1 onion, cut into chunks

— 250g cherry tomatoes, halved

— 50g feta cheese, crumbled

— Fresh herbs (like parsley and basil)

— Rocket (for topping)

— Salt and pepper (to taste)

For the Dressing:

— 1 tbsp red pesto

— 1 tbsp apple cider vinegar

— Juice of half a lemon (to taste)

— Dash of olive oil

— Salt (to taste)

Method:

— Preheat the oven to 180°C.

— Toss the sweet potato, courgette, and onion with a little olive oil, then season with salt and pepper. Spread evenly on a baking tray.

— Roast for 25-30 minutes, or until veggies are tender and slightly caramelized.

— In a large bowl, mix the roasted veggies with cherry tomatoes, crumbled feta, and fresh herbs.

— To make the dressing, whisk together red pesto, apple cider vinegar, lemon juice, olive oil, and salt. Pour over the salad and gently toss to coat.

— Top with fresh rocket just before serving.
