Chocolate Date Covered Apple

 

You’ll need:

— 4 Medjool dates (pitted)

— 1 crisp apple (e.g., Pink Lady or Honeycrisp)

— 40g 70% dark chocolate

— A pinch of sea salt

— A sprinkle of cinnamon

— Crushed pistachios (for garnish)

— A dash of coconut oil (optional)

Method:

— Press the Medjool dates on a sheet of foil until flat. Place the apple in the center and wrap the foil around the apple, pressing down so the dates stick to it.

— Freeze the wrapped apple for 5-10 minutes to help the date layer firm up.

— In the meantime, melt the dark chocolate with a tiny bit of coconut oil until smooth.

— Unwrap the apple and place it in a bowl. Pour the melted chocolate over the top, then sprinkle with sea salt, cinnamon, and crushed pistachios.

— Refrigerate for 20-30 minutes or until the chocolate is set. Slice into wedges.
