Autumn Chopped Salad

 

You’ll need:

— 1-2 carrots (grated)

— 1 apple (finely chopped)

— Romaine lettuce (finely chopped)

— Chicory (finely chopped)

— 1/2 red onion (thinly sliced)

— Leftover rotisserie chicken (or other protein source, chopped)

— Toppings: Pomegranate seeds and pumpkin seeds

— Salt & pepper

For the dressing:

— 2 tbsp tahini

— 2 tbsp apple cider vinegar

— A dash of water

— Juice of 1/2 lemon

— 1 tbsp brown sugar

— Salt & extra lemon juice to taste

Method:

— Start by prepping all your veggies: grate the carrots, chop the apple, romaine lettuce, and chicory, and slice the red onion. Set everything aside in a large bowl.

— Add your chopped leftover rotisserie chicken (or any protein) to the bowl.

— Prepare the dressing: In a small bowl, whisk together the tahini, apple cider vinegar, water, lemon juice, brown sugar, and a pinch of salt. Adjust the consistency with more water, and taste to balance the lemon and salt.

— Pour the dressing over the salad ingredients and toss everything together gently to coat.

— Finish by sprinkling the pomegranate and pumpkin seeds over the top for a beautiful and nutritious crunch.
