Lazy Lasagna Soup

 

You’ll need:

— 1 red onion, diced

— 1 carrot, shredded

— 1 courgette (zucchini), shredded

— 5 ml olive oil

— 400g lean beef mince (or substitute)

— 400g crushed tomatoes

— 400g blended canned tomatoes

— 400-500 ml water

— 1 clean-ingredient vegetable or chicken stock cube

— 2 bay leaves

— 1 Parmesan rind

— 1 tbsp cumin

— 1 tbsp oregano

— Chili flakes (to taste)

— 1 tsp garlic powder

— 150g pasta (maccheroni or broken lasagna sheets)

— Salt & pepper

Method:

— Preheat a large pot to medium heat.

— Sauté diced onion in olive oil until translucent, then add shredded carrot and courgette. Cook for 3-4 minutes.

— Add the beef mince, breaking it apart and cooking until slightly browned.

— Stir in the crushed tomatoes, blended tomatoes, water, and stock cube. Add the bay leaves, Parmesan rind, cumin, oregano, chili flakes, garlic powder, salt, and pepper. Bring to a simmer for 5-10 minutes.

— Add the pasta and simmer for another 10 minutes until pasta is cooked through.

— Remove the bay leaves, check seasoning, and serve with freshly grated Parmesan.
